Cépages champenois
Dans la plupart des cas, le Champagne est un assemblage des trois principaux cépages autorisés (Chardonnay, Pinot Noir et Pinot Meunier) provenant de divers sites et de plusieurs millésimes différents. Dans le passé, un certain nombre de cépages étaient plantés en Champagne, mais maintenant la région se concentre sur seulement trois:
Pinot Noir
Cépage principal, représentant 38% du total des plantations, le Pinot Noir apporte puissance et profondeur.
Pinot Meunier
Occupant 31% de la superficie totale du vignoble, le Pinot Meunier produit des vins ronds et fruités à l'acidité équilibrée.
Chardonnay
Représentant 30% du total des plantations, le Chardonnay produit un style floral, minéral et des vins très fins.
Le Pinot Blanc, l'Arbane et le Petit Meslier sont d'autres cépages encore autorisés à la production champenoise, mais ils sont plantés en infimes quantités.
